According to the IUCN, over 85% of sturgeon species, modern-day dinosaurs, are classified as at risk of extinction, making them more critically endangered than any other species group.  So, perhaps obsessing is too mild a term for what I feel for this highly-evolved creature that has survived for millions of years and that has been mindlessly exploited.  Fear might be a better word.  Yes, fear. The reason should be clear to anyone familiar with the history of man’s indifference to nature and to his food sources.  The fisherman and aquaculturists at Acadian Sturgeon And Caviar Inc are one of the few truly sustainable fisheries in the world. They worked countless hours to manage and protect these fish while also running a successful commercial caviar and sturgeon business. During fishing season, they have a maximum quota of 300 fish, half being males and half females, and release about 30% of their total catch. The released fish are tagged with a T-bar tag and microchip that helps track population and migration patterns. All the data collected is shared publicly with researchers working on Atlantic sturgeon. Acadian Sturgeon And Caviar also work with conservationists overseas, helping to repopulate over-exploited fisheries in Europe by sending fertilized eggs and fry.
